If it's too sweet, don't worry! There are a couple things you can do to fix this.
If you’ve racked your wine 0 — 1 times:
Your wine still has live yeast in it, and you can actually let it ferment again! The yeast will continue to eat more sugar.
Take it out of the fridge, and put it back in the warm, dark place. Help your yeast along by warming up your bottle first. (To do this, simply run it under warm water in your sink, plug your drain, and let your container sit in the warm water for 20 minutes).
Then, let your drink ferment for another 3 to 5 days in a warm, dark place.
If you’ve racked your wine 2 or more times:
There aren't enough yeast left in your bottle to restart fermentation, but we've got a couple of things you can try.
1. If you’re making a darker wine, (red grape, cranberry, pomegranate, cherry, etc.) add a cup of strong, black tea in your wine to give it a dry, tannic mouthfeel. Add it by the glass, and taste it. When you’ve decided on an amount you like, you can add it to your bottle. 🍷
2. If you’re making a lighter wine (white cranberry, white grape, rosé), add several splashes of lemon juice to your wine. 🥂
3. Mix your sweet wine in with something else. You can mix it with seltzer water for a light, refreshing drink, or you can make your next batch of wine quite dry, and mix it with that.
4. Try fortifying your wine with brandy or vodka!
