If you have the same amount of juice as your container, the drink designer will tell you to pour a bit of juice out of the container. Usually, 2 to 3 inches of headroom (empty space on the top of your container) is sufficient.
During fermentation, the yeast in your Brewsy bag will start eating sugar. When they eat sugar, they produce alcohol as a byproduct... and carbon dioxide! The carbon dioxide will cause your juice to start foaming when fermentation begins. Without empty space on top of your container, your drink will foam out of the airlock — this isn't a huge deal, but it can result in a messy floor if it spills.
Why is it sometimes necessary to pour a bit of juice out before getting started?
